In reply to <a href="https://authenticfoodquest.com/bougatsa-recipe-chania-crete/#comment-1057505">Lena Patsa</a>.

Thank you Lena for your note. One of the things we loved about Crete and Greece in general, is the passion about the food. Your note clearly reflects this. You are correct, the bougasta is associated with Thessaloniki and northern Greece in general. But, it seems like you are not familiar with the Cretan version which uses local ingredients. It is iconic in Chania on the island of Crete with a more than 100 year old tradtion. The difference is found in the local ingredients and that's why we travel to the individual regions to learn and meet the people behind the local specialties. Higly recommend spending time on Crete, you too will taste the difference. Cheers

I appreciate your article, but... Just because you guys first tasted bougatsa in Chania, it does not make it a "local" delicacy, nor is it actually renowned to be from there. Bougatsa is a northern dish, famously from Serres (and yes, originating from the Greeks of Constantinople). Thessaloniki is also well-known to have a long and varied bougatsa tradition. I'm Greek, borne and raised, and this article is the first time I hear of an association between bougatsa and Crete. Some rudimentary research would have told you so: wikipedia.org/wiki/Bougatsa.
