I love the article and will use it in preparation for our ethnic dining group’s Sicily theme dinner next month.

However, there must be an error or clarification required. Pani Ca Meusa, you say originated in the Jewish community, in which offal and other less desirable parts were served on a sandwich with cheese. While Pani Ca Meusa is available as street food today, no observant Jewish person would have combined meat with cheese as it’s against the dietary laws. You may wish to clarify this article accordingly.

You nailed it! I am in Sicily 6 months/year, and your food itinerary is the most accurate I’ve read. As you know, Sicilians in general have a very fierce pride regarding their food, history, culture, and land. You described like a Sicilian!
